Courgette with Sundried Tomatoes, Balsamic Vinegar and Brown Sugar

Serves 4-5

2 courgettes dice mix fry on high heat simmer until a thick sauce is obtained
1 onion slice in rings
olive oil
150g sundried tomatoes cut in large pieces
3 Tbs balsamic vinegar
100-150g soft brown sugar
Serve with couscous or pasta and possibly some minced meat or spiced chicken.
