Courgette with Sundried Tomatoes, Balsamic Vinegar and Brown Sugar
Serves 4-5
| 2 courgettes | dice | mix | fry on high heat | simmer until a thick sauce is obtained |
| 1 onion | slice in rings | |||
| olive oil | ||||
| pepper | ||||
| salt | 150g sundried tomatoes | cut in large pieces | ||
| 3 Tbs balsamic vinegar | ||||
| 100-150g soft brown sugar |
