Duck in orange sauce
Serves 3
| 500g duck (with skin) | put the duck in 250ml sauce in the oven for 45 min at 200C, pour juice over duck every 10 min. | |||||
| 3 oranges | wash & cut all in 8 pieces | keep on low heat for 15-30 min (don't cook) | sieve, keep fluid only | add | add pepper to taste | |
| 1-2 glasses of red port wine | ||||||

| 2 tbs honey | ||||||
| 1 tsp mustard | ||||||
| 1 tsp worcestershire sauce | Thicken rest of sauce with starch | |||||
| 1/2 soup cube | ||||||
| 2 onions | fry shortly | |||||
| 2 tsp thyme | ||||||
| black pepper | ||||||
